There are a wide variety of textures from subtle to exuberant. Most of the textures are quite large and can be cropped. Textures can also be muted with a Hue/Saturation adjustment or converted to grayscale.
The watercolor texture below is called Deluge and has a lot of personality. It's also quite large. I easily cropped it to the area shown to use in this Muscari flowers photograph.

Hi Esther. Boy, I have no idea! I’m not actively trying to sell my images right now so I haven’t done much market research. I’d ask around on Photography forums or look at what others are selling their work for. Also, look at the Print on Demand stores like RedBubble or Society 6 and see what the prints are going for. Plus, of course take into consideration your costs and the commission the gift shop would take. Good luck!
